Turkey Salad Sandwich

Serves 4

INGREDIENTS

  • 4 cups leftover turkey

  • 1 cup finely diced fennel

  • 1/2 cup dried cranberries

  • 1/2 cup plain Tree island Greek Yogurt in Natural

  • 2 tbsp Mayo

  • 1-2 tbsp finely chopped fennel fronds

  • 1 tsp apple cider vinegar

  • Zest from a small orange

  • Salt to taste

 

METHOD

Mix yogurt, vinegar, zest and fennel fronds. Combine all other ingredients. Add dressing, stir to combine add salt to taste.
