The Best (Vegan) Brownies
These brownies are creamy and dreamy and no one will believe that they are vegan! Dress them up for Christmas with some festive sprinkles and you are good to go. They also freeze well so you can make them ahead of time!
Ingredients:
1cup + 2 tbsp milk of choice (we used soy)
1/2 cup + 3 tbsp avocado oil
1 tbsp pure vanilla extract
1 cup white flour
1 cup unsweetened cocoa powder
1/4 tsp + 1/8 tsp salt
1/2 tsp baking powder
1/2 cup brown sugar
1/3 cup white sugar
2 tbsp ground chia seeds
1 tbsp ground instant coffee
Instructions:
Preheat oven to 330F. Grease a 9×13 pan and set aside.
Whisk together milk alternative, oil and vanilla and then set aside.
In a large mixing bowl, thoroughly combine all remaining ingredients
Pour wet into dry, stir to combine, and pour into the prepared pan. Smooth down. Bake for around 18-20 minutes.
The brownies will look a little underdone when they come out, but that’s okay! Test with a toothpick cooked through (ish) they firm up. Drizzle with icing if desired use 1 tbsp coconut oil, 2 tbsp milk alternative, 1 tbsp cocoa powder and 1 cup icing sugar
