Need things to be easy?  We hear you!  The less mess the better.  Our Registered Dietitian, Jenn Messina, created this recipe with her kids to brighten up a rainy afternoon.  It is moist and delicious and you can freeze slices (if there is any left).  Make some today or SAVE THIS POST for another day.

Ingredients

  •  3 ripe bananas

  •  ½ cup brown sugar

  •  ½ cup brown sugar

  •  1 egg, beaten

  • 1 tsp vanilla extract

  • 1 tsp baking soda

  • ¼ tsp salt

  • 1 cup flour

  • ½ cup high protein pancake mix

  • ½ cup mini chocolate chips ​

Instructions:

  1. Preheat oven to 350 °F

  2. In a large bowl, add the banana and mash well.  Add sugar, egg, vanilla, salt, and melted butter. Mix well.

  3. Add flour & baking soda and stir until combined. Add chocolate chips

  4. Pour into a greased loaf pan, top with a few extra chocolate chips and banana slices

  5. Bake for 50-55 minutes until golden brown!  Enjoy
