Mini Chicken Enchilada Bites

If you’re looking for a high protein, new family favourite appetizer recipe look no further! You have got to try these Mini Chicken Enchilada Bites from our Registered Dietitian!

Makes 36 bites 

Ingredients:

  • 2 chicken breasts

  • 1 tsp chili powder 

  • 1 tsp cumin

  • 1/2 tsp garlic powder

  • 1/2 tsp paprika 

  • 2-3 tbsp olive oil 

  • 1 tomato

  • Scoop taco chips

    Optional toppings: cheese, cilantro, avocado, tomatoes 

Instructions:

1. Combine all seasonings in a small bowl, add chicken and olive oil and coat completely

2. Add one fresh chopped tomato to your Instapot

3. Add seasoned chicken to the pot and set to “meat/chicken” mode about 25min

4. Once cooked, shredded chicken, and add to chips. Top with desired toppings.
