Kids Fav Oatmeal Pancakes (Gluten Free)
Ingredients:
1 cup rolled oats
1 tbsp baking powder
½ tsp salt
1 tsp baking soda
½ tsp cinnamon
1 egg
¾ cup oat milk (or milk of choice)
½ tbsp avocado oil
½ tsp vanilla
⅓ cup choc chips
Instructions:
In a food processor, blender, or bullet add the rolled oats and blend until it resembles a fine powder (flour-like texture)
Add all the dry ingredient together in a large bowl: ground oats, baking powder, salt, baking soda, and cinnamon
In a second bowl add the wet ingredient together: oatmilk, avocado oil, vanilla
Stir wet ingredients into dry ingredients and stir until combined, then add chocolate chips
In a pan, heat to low/medium and add batter into ¼ cup portions to pan, these will cook quickly so watch carefully and flip when the batter has bubbles and the edges are golden
