Apple Cinnamon Muffins

These are delicious, healthy and packed with fibre & protein to keep you full for hours. Freeze leftovers for a healthy snack another day!

Ingredients:

  • 1 cup rolled oats, ground

  • 3⁄4 cup white flour

  • 1.5 tsp baking powder

  • 1⁄2 tsp salt

  • 1⁄2 tsp baking soda

  • 1 tsp cinnamon

  •  2 eggs

  • 1⁄3 cup apple sauce

  • 1⁄3 cup maple syrup

  • 1⁄3 cup Greek yogurt

  • 1⁄3 cup milk

  • 1⁄3 cup melted butter

  • 1 tsp vanilla

Instructions:

  1. In a large bowl, combine all dry ingredients and mix well. In a separate bowl add all the wet ingredients (eggs, applesauce, syrup, Greek yogurt, milk, butter, and vanilla)

  2. Once combined, add the wet ingredients to the dry in a few strokes until just combined.

  3. Bake 350 for 15-18 minutes.
