Apple Cinnamon Muffins
These are delicious, healthy and packed with fibre & protein to keep you full for hours. Freeze leftovers for a healthy snack another day!
Ingredients:
1 cup rolled oats, ground
3⁄4 cup white flour
1.5 tsp baking powder
1⁄2 tsp salt
1⁄2 tsp baking soda
1 tsp cinnamon
2 eggs
1⁄3 cup apple sauce
1⁄3 cup maple syrup
1⁄3 cup Greek yogurt
1⁄3 cup milk
1⁄3 cup melted butter
1 tsp vanilla
Instructions:
In a large bowl, combine all dry ingredients and mix well. In a separate bowl add all the wet ingredients (eggs, applesauce, syrup, Greek yogurt, milk, butter, and vanilla)
Once combined, add the wet ingredients to the dry in a few strokes until just combined.
Bake 350 for 15-18 minutes.
