Spicy Cod Fillets
Ingredients:

4 1/2-3/4 “ thick cod fillets

Grated peel and juice from 2 oranges

1 tbsp grated lemon peel

2 tsps grated lime peel

2 tbsps fresh lemon juice

1 tbsps fresh lime juice

1/3 cup olive oil

2 tbsps rice wine vinegar

1/2 tbsp soy sauce

2 cloves garlic, peeled

2 tbsps chile powder

1 tsp ground cumin

1 tsp ground coriander

1/2 cup finely minced fresh cilantro

Directions:

Preheat oven to 450F

Place all ingredients except for the fish in a food processor or blender. Process for 1-2 minutes or until smooth. Place fillets in a large oven proof baking dish. Spoon 2 tablespoons of the sauce over the top of each fillet and cover dish with foil. Bake for 8-10 minutes. Meanwhile place remaining sauce in a small pot and cook over medium-high heat stirring frequently. Reduce heat to low and cook fillets uncovered until warmed through and slightly thickened.

Remove fillets to a heated platter and cover with remaining sauce.
