Salmon Cakes
  • 1/4 cup finely minced red onion
  • 1/2 red bell pepper, finely minced
  • 2 tbsps olive oil
  • 2 cloves garlic, finely minced
  • Dash of hot sauce, and Worcestershire sauce Salt and pepper to taste
  • 1 1/2 lbs ground salmon
  • 1 tbsp fresh cilantro, finely minced
  • 1 tbsp capers
  • 1 tbsp fresh dill, finely minced
  • 1 teaspoon coarse ground Dijon mustard
  • 1 tsp fish oil, optional
  • 1tbsp lemon juice
  • 1/4 cup mayonnaise
  • 1/4 cup bread crumbs
  • Additional olive oil for cooking

Heat olive oil in a sauté pan over medium heat. Sauté onion and red pepper until onion is soft and translucent. Add capers and sauté until fragrant about 2 minutes. Remove from heat and cool.

Combine with remaining ingredients and chill for 1-2 hours. Remove from fridge and form into 1 inch thick patties. Heat olive oil in a pan over medium heat and sauté patties for about 3-4 minutes per side or to desired doneness. Serve with tartar sauce and lemon wedges or fresh salsa.
