Serves 4

4 steelhead fillets

1/3 cup soy sauce

1/3 cup orange juice

1/3 cup lime juice (2 limes)

¼ cup honey

¼ cup chopped green onion

1 tbsp Dijon mustard

1 tsp ground ginger or 1 tbsps minced fresh

¼ cup vegetable oil

¼ cup rice vinegar

1 tbsp sesame oil

1 tbsps black or white sesame seeds

1 tsp sugar

1 large long English cucumber, very thinly sliced or finely diced

Salt and pepper to taste.


Combine soy sauce, orange and lime juice, honey, green onion, Dijon mustard and ginger in a shallow baking dish. Add steelhead pieces turning to coat evenly. Let marinate 15-30 minutes.

Combine vegetable oil, rice vinegar, sesame oil, sugar and sesame seeds in a small bowl and whisk together. Add cucumbers, salt and pepper and toss gently to coat. Chill until needed.

Preheat grill to medium high and lightly grease grill rack or spray with non-stick spray. Cook 6-8 minutes per side or until steelhead is cooked through (roughly 10-12 minutes in total per inch of thickness.)

Place steelhead on warmed serving plates or 1 large platter surrounded by the cucumber salad.
