SPINACH SALAD WITH LEMON POPPY SEED VINAIGRETTE
Ingredients:

POPPY SEED VINAIGRETTE

1/2 cup extra virgin olive oil or vegetable oil

1/2 cup honey

1/2 tsp paprika

½ tsp dry mustard

1 tbsp poppy seeds

2 tbsps white wine vinegar

Juice and grated zest of half a lemon

1/2 tbsp finely grated onion

1 tbsp finely minced fresh mint

SALAD

6-8 cups spinach leaves, torn or a combination of spinach and red leaf lettuce

1 cup thinly sliced red onion

1 cup blueberries

2 Bartlett pears, thinly sliced

1/2 – 1 cup crumbled blue cheese

1/2 cup toasted walnuts, crumbled

Directions:

Place all dressing ingredients except oil in a food processor or blender. Blend until combined and then with the motor running slowly add the oil until mixture thickens and is emulsified. Chill until ready to serve

Combine all salad ingredients together in a large bowl, add dressing tossing gently to combine. Enjoy!
