Pork Loin Chops with Grilled Avocado Salsa
Ingredients:
8-10 boneless pork loin chops
Marinade:
1/4 cup chopped fresh rosemary
1/4 cup minced shallots
6 cloves garlic, finely minced
1 tablespoon minced lime zest
1/3 cup fresh lime juice
1/3 cup dry white wine
1/3 cup extra virgin olive oil
1/3 cup coarse grained Dijon mustard
1 teaspoon ground cumin
1/4 cup honey
1 teaspoon chipotle chili sauce
Grilled Avocado Salsa
4 avocados, peeled, halved and pitted
Olive oil and balsamic vinegar
Salt and pepper to taste
1 clove garlic minced
2 granny smith apples, peeled, cored and coarsely diced
1/2 medium red onion, coarsely chopped
1 tablespoon minced canned chipotle peppers in adobo (more if you like it hot!)
Juice of two fresh limes
1/4 cup chopped cilantro
Directions:
Combine all marinade ingredients together in a shallow baking dish. Add pork chops, tossing to coat and refrigerate for 1 hour or up to 8. Remove chops from the marinade and grill over medium high heat for about 5-8 minutes per side or until desired doneness.
Liberally brush avocado halves with olive oil and balsamic vinegar and season with salt and pepper. Lightly oil grill or grill pan and grill halves about 3-5 minutes per side. Let cool slightly then coarsely chop. Combine remaining salsa ingredients together in bowl and gently fold in avocado. Sprinkle with additional balsamic vinegar and olive oil if desired.
Arrange pork chops on a warm serving platter or individual plates and spoon salsa over top.
