GRILLED FRESH LOCAL APRICOTS WITH HONEY & GOAT CHEESE
4 apricots, halved and pitted
4 ounces soft chevre
2 tablespoon honey
1 tablespoon orange Juice
1 tablespoon balsamic vinegar
2 teaspoons fresh basil or mint, minced
Salt to taste
Olive oil to brush the apricot halves.
Preheat the grill over medium heat.
In the microwave or in a small saucepan, gently heat the honey, orange juice, balsamic and herbs. Stir well and set aside.
Brush each apricot half with a little olive oil and sprinkle with salt. Place apricots cut side down on the grill for about 2-3 minutes. Turn the apricots over and reduce the heat to low. Brush each apricot halve with the honey mixture reserving any unused marinade to drizzle over top after cooking. Top each apricot half with 1/2 oz. of goat cheese. Close the grill lid and let the cheese melt for a couple of minutes.
Serve with a drizzle of the remaining honey mixture.
