Serves 4

1-2 tablespoons olive oil

1 onion, finely diced

1 tablespoon finely diced garlic

1 1/2 lb extra lean ground buffalo meat

1 egg, beaten

2 teaspoons each chopped fresh thyme and basil

1 tablespoon Dijon mustard

1 teaspoon prepared horseradish

1/2 cup coarsely chopped dried cranberries

Salt and pepper to taste

6 oz blue cheese, at room temperature (or any other soft cheese, such as chevre, gorgonzola, brie etc)


Heat oil in a sauté pan over medium heat. Sauté onion and garlic until softened about 5 minutes. Allow to cool.

In a large bowl combine buffalo meat, egg, thyme, basil, mustard, horseradish, dried cranberries, and cooled onion garlic mixture. Season with salt and pepper and mix thoroughly. Form the blue cheese into four equal balls.  Form the meat mixture into 4 equal patty shapes. Push a cheese ball into the center of each patty forming the meat back over the top to cover. Place patties on a greased grill or broiler pan and grill or broil 4-5 minutes per side or until no longer pink inside. Serve on a wholegrain bun with all your favourite condiments or without a bun along with a salad.
