Sausage, Apple & Cranberry Stuffing

Ingredients:
1 tablespoon butter
1 pound pork sausage
1 cup diced onion
I cup diced celery
1 cup diced apple
12 cups bread cubes, toasted or stale
½ cup dried cranberries
2 tablespoons minced parsley
2 tablespoons fresh thyme leaves
2 tablespoons minced sage
1 ½ teaspoons salt
1 teaspoon ground black pepper
1 cup chicken stock
¼ cup of butter, cut into 12 pieces, plus more for greasing the baking dish
Directions:
- Preheat the oven to 350 F.
- Melt 1 tablespoon of butter in a medium sized pan over medium heat.
- Add the sausage and break into small pieces while cooking.
- Once the sausage is cooked, add the onion, celery, and apples, and cook until soft.
- Place the bread cubes in a large mixing bowl. Add the sausage mixture, cranberries, herbs, salt, and pepper.
- Add the chicken stock to the stuffing and mix well.
- Place the stuffing in a greased 9×11 baking dish.
- Top with the remaining butter pieces.
- Bake at 350 F for 1 hour until golden brown.
