ROAST LEG OF LAMB WITH A SWEET SOUR MINT GLAZE
Ingredients:
Serves 8-10
1 whole leg of lamb
2 cups honey
3/4 cup balsamic vinegar
2 tablespoons coarse ground mustard
1/3 cup finely chopped fresh mint leaves
Juice of one half lemon
Salt and pepper to taste
2 tablespoons finely minced fresh garlic
Olive oil
Mint leaves for garnish
Directions:
Preheat oven to 375F
Whisk together the honey, vinegar, mustard, lemon juice and mint in a medium bowl until combined. Season with salt and pepper.
Season lamb all over with salt and pepper. Heat the olive oil in a large roasting pan on medium high until oil is smoking (you could set the pan over two burners if necessary). Carefully sear the lamb on all sides until browned – about 3-4 minutes per side.
Transfer to the oven and roast about 1 1/2 hours for medium rare or to an internal temperature of 130F or until desired doneness. During the last half hour of roasting baste liberally every 8-10 minutes with the glaze. Let rest, covered 10-15 minutes before carving.
Great served along with a potato onion gratin or minted new potatoes and peas.
