I couldn’t find a recipe for protein balls that included ingredients in my pantry so I whipped this one up! As you can tell, I like easy recipes and minimal mess. No fancy equipment. The addition of hemp hearts adds additional protein (2 tbsp is 10g of protein!) and healthy omega-3 and omega-6 fats to keep you full and satisfied for hours. These can be stored in the freezer and are perfect when you need a high protein snack between meals.
Ingredients:
- 8 prunes
- 1.5 cup rolled oats
- 1/2 warm water
- 1/2 cup ground almonds
- 1/2 cup hemp hearts
- 1/2 cup almond butter
- 2 tbsp honey
- 2 tbsp coconut oil, melted
- 2 tsp vanilla
- Shredded coconut to roll balls in (optional)
Instructions
- Line a plate with parchment paper
- Add prunes, almond butter, and warm water in any mixer/blender/bullet pulse until smooth
- Add prune mixture to a large bowl along with everything else (except coconut)
- Take a tablespoon to measure and roll the mixture into a ball. Roll in shredded coconut (if desired), and set on a plate to chill in the fridge
