These mini bird nest cookies are “no bake”, adorable, fast and so delicious! Happy Easter everyone!

Ingredients:

• 2 bags mini eggs
• 1 cup rolled oats
• 1/4 cup honey
• 1/4 cup melted coconut oil
• 1/3 cup nut butter
• 1/3 shredded coconut
• 2 tbsp cocoa powder
• 1 tsp vanilla
• 1/4 tsp salt

Instructions:

1. Melt coconut oil and honey together in the microwave for 20-30 seconds.
2. Mix all ingredients (except eggs) in a large bowl and stir in the honey mixture.
3. Let sit for 30 min in the fridge then remove, form into ‘nests’ and fill with sweet mini eggs!
