apple cinnamon muffins
These are delicious, healthy and packed with fibre & protein to keep you full for hours. Freeze leftovers for a healthy snack another day!
Ingredients:
- 1 cup rolled oats, ground
- 3⁄4 cup white flour
- 1.5 tsp baking powder
- 1⁄2 tsp salt
- 1⁄2 tsp baking soda
- 1 tsp cinnamon
- 2 eggs
- 1⁄3 cup apple sauce
- 1⁄3 cup maple syrup
- 1⁄3 cup Greek yogurt
- 1⁄3 cup milk
- 1⁄3 cup melted butter
- 1 tsp vanilla

Instructions:
- In a large bowl, combine all dry ingredients and mix well. In a separate bowl add all the wet ingredients (eggs, applesauce, syrup, Greek yogurt, milk, butter, and vanilla)
- Once combined, add the wet ingredients to the dry in a few strokes until just combined.
- Bake 350 for 15-18 minutes.
