WATERMELON FETA SALAD
Ingredients:

1 small red onion, finely diced

3-4 lbs watermelon, cubed

1 1/2 cups feta cheese, cubed

1 cup fresh mint leaves, minced

1/2 cup pitted black olives

ΒΌ cup extra virgin olive oil

Juice of two limes

Black pepper to taste

Directions:

Whisk the olive oil, lime juice and pepper until combined in a small bowl. Place remaining ingredients in a large bowl, pour dressing over and gently toss to combine. Chill for at least an hour. Garnish with additional mint leaves if desired.
