SPICE RUBBED STRIP LOIN STEAKS WITH GRILLED TOMATOES & AVOCADO CREAM
Ingredients:

Serves 4

4 Angus beef strip loin steaks

SPICE RUB

2 tbsps paprika

¼ cup chili powder

2 tsps ground coriander

2 tsps ground cumin

2 tsps dry mustard

2 tsps dried oregano

1 tsp dried thyme

2 tsps salt

2 tsps freshly ground black pepper

1 tbsp sugar

1 tbsp minced garlic

AVOCADO CREAM

2 ripe avocados

½ long English cucumber

½ cup sour cream (you could substitute low fat or yogurt)

½ cup green onions, finely chopped

½ cup chopped fresh dill

¼ cup chopped fresh mint

3-4 dashes Tabasco sauce

2 dashes Worcestershire sauce

Juice of 2 limes

Salt and pepper to taste

24 cherry tomatoes

Directions:

Combine all rub ingredients and set aside.

For the sauce, pit and peel the avocado and place in a food processor or blender. Peel cucumber, cut into small pieces and add to the processor along with the sour cream, green onions, dill, mint, Tabasco and Worcestershire sauces, lime juice and ¼ cup water. Puree until smooth, adding more water if necessary. Season with salt and pepper. Place in a bowl and chill, covered until needed. Leave the pits in the sauce to prevent browning but remove before serving. Bring to room temperature before serving.

Wash tomatoes and set aside.

Preheat grill to high. Rub both sides of the steak liberally with the spice rub. Brush with olive oil and grill 5-6 minutes per side for medium rare or to desired doneness. At the same time brush the tomatoes or the grill with olive oil and grill until the skins are lightly charred and starting to split open.

Ladle the avocado cream over individual plates and place steaks on top. Garnish with the grilled tomatoes.
