SOUTHWESTERN TURKEY BURGERS
1 lb ground turkey
1 cup cooked corn kernels, drained
1/4 cup finely minced green onion
1/4 cup finely minced fresh cilantro
1/4 cup finely chopped roasted red pepper
3 tbsps finely minced garlic
1 tbsp chili powder
1/4 tsp ground cumin
1/2 cup salsa, (mild medium or hot)
1/4 cup crushed tortilla chips
1 cup shredded cheese of your choice
4 Hamburger, ciabatta or Portuguese buns
Salt and pepper to taste
Preheat grill to medium high.
In a large bowl combine ground turkey, corn, green onion, cilantro, roasted red pepper, garlic, chili powder, cumin. 1/4 cup of the salsa, tortilla chips and 3/ cup of the shredded cheese. Season with salt and pepper. Mix thoroughly but gently with your hands. Shape into 1/2 inch patties.
Oil or spray grill with a non stick cooking spray. Grill patties about 5 – 6 minutes per side or until an instant read thermometer reads 160F when inserted into the thickest part. Top with the remaining cheese and salsa and serve on buns along with slices of tomato, onions, olives etc or serve as is along with coleslaw or a light green salad. Enjoy!
