SHRIMP AND AVOCADO SALAD WITH BUTTERMILK CHIVE DRESSING
Ingredients:

Serves 4

2 cups shrimp meat

1 small red onion, finely diced

1 orange or yellow bell pepper,

1/3-1/2 long English cucumber,

1 rib celery,

1 avocado,

2 hot house tomatoes,

4 cups salad greens

juice of ½ lemon

 

DRESSING:

¾ cup buttermilk( low fat is fine)

¼ cup sour cream(low fat or yogurt will also work)

1 clove garlic, finely minced

juice of the other half lemon

2 tbsp chopped fresh chives

1 tbsp chopped fresh dill

freshly ground black pepper

Directions:

Mix all the dressing ingredients together and chill for at least 30 minutes.

Cut the orange pepper, celery, avocado, tomatoes and red onion into small dice. Add the shrimp and the dressing and gently toss to coat evenly. Place one cup of greens on each salad place and mound shrimp mixture on top. Garnish with additional sprigs of dill and or chives if desired.
