ROASTED CAULIFLOWER WITH BALSAMIC & PARMESAN CHEESE
Ingredients:

1 head cauliflower, trimmed and cut into florets

2 tablespoons olive oil

2 tablespoons balsamic vinegar

2 teaspoons chopped fresh thyme

2 cloves minced garlic

3 tablespoons grated parmesan cheese

2 tablespoons chopped fresh parsley

2 teaspoons drained capers

2 teaspoons lemon juice

Salt and pepper to taste

Directions:

Toss together cauliflower, oil, balsamic vinegar thyme and garlic in a bowl. Arrange in single layer on lightly greased rimmed baking sheet or roasting pan. . Bake in 425F oven, turning once for about 40 minutes or until tender and golden brown.

Transfer to a serving dish and gently stir in Parmesan, parsley, capers and  lemon juice. Season with Salt and pepper and serve.
