PAN SEARED SNAPPER WITH CAPER MUSTARD SAUCE
Ingredients:

SERVES: 4-6

 

4 snapper fillets

1/4 cup flour, seasoned with salt, pepper and 1 teaspoon dried basil

3 tablespoons olive oil

2 tablespoons capers

1/4 cup sliced black olives

2 teaspoons black or white mustard seeds

1-tablespoon coarse-grained Dijon mustard

2 tablespoons chopped fresh cilantro

1 tablespoon chopped fresh dill

4 tablespoons olive oil

Juice of 1 lemon

Directions:

Dust the snapper fillets with the seasoned flour. Heat the 3 tablespoons of the olive oil in a large sauté pan over medium heat. Sauté the fish for 5 minutes. Combine remaining ingredients together to make a sauce. Carefully turn the fillets over and pour in the sauce. Continue to sauté for another 5 minutes or so until fish is cooked through.
