GRILLED CORN ON THE COB WITH JALAPEÑO LIME CHILI BUTTER
8 ears fresh corn on the cob, husks & silk removed
Vegetable cooking spray or melted butter
Salt and freshly ground pepper
1/2 cup butter, softened
1 jalapeño pepper, seeded and minced
1 small garlic clove, pressed
1 tsp chili powder
1 tbsp lime zest
Juice of one lime
2 tsps chopped fresh cilantro
Combine butter, jalapeño, garlic, chili powder, cilantro, lime zest and juice. Preheat grill to 350° to 400° (medium-high) heat. Coat corn lightly with cooking spray or butter and sprinkle with salt and pepper. Grill corn, covered for 10-15 minutes or until golden brown, turning occasionally, every 2-3 minutes.
Remove corn from grill, and cut in half or into thirds. Serve corn with butter mixture.
If you wanted to serve the cobs whole pull back husks from the ears of the corn and remove and discard the silk. Tie husks together with kitchen string to form a handle. Soak in cold salted water to cover 10 minutes; drain. Grill as above.
