CRAB AND AVOCADO DIP
4 firm but ripe avocados, peeled, pitted, and coarsely chopped
4 tbsps fresh lime juice
1 lb crabmeat
Salt & freshly ground black pepper
1/4 cup sour cream, regular or non fat
1/2 cup mayonnaise, regular or non fat or plain yogurt
2 tbsps chili sauce
1 tsp Worcestershire sauce
3 tbsps thinly sliced fresh basil
2 tbsps finely chopped fresh chives
1 red jalapeño, finely chopped
1 tbsp capers
Mash avocados with the lime juice in a medium size bowl. Add crabmeat and mix gently. In a separate bowl combine the rest of the ingredients and mix well. Fold this mixture into the avocado crab mixture and chill.
Serve on crackers, with warmed tortilla chips or phyllo cups. Sprinkle with some paprika and snipped chives for garnish.
