BROCCOLI WITH CARAMELIZED SHALLOTS AND PINE NUTS
1 large bunch broccoli, cleaned, and coarsely chopped. (Cut off woody ends of the stalks and trim away some of the outer peel)
2 tbsps butter
6 shallots, peeled and sliced into 1/8 inch rounds
¼ cup balsamic vinegar
1 tbsp honey
Salt and pepper to taste
2 tsps balsamic vinegar
1 tsp red wine vinegar
1 tsp lemon juice
½ tsp red pepper flakes or to taste (optional)
4 tbsps extra virgin olive oil
¼ cup pine nuts toasted
Steam broccoli and set aside. Melt butter in a medium saucepan over medium heat. Add the shallots, vinegar, and honey cooking until the vinegar has reduced and coated the shallots. Stir constantly – about 10 minutes. Season with salt and pepper. Set aside.
Mix together the vinegars, lemon juice, and red pepper flakes. Whisk in the olive oil until smooth. Return shallot mixture to the stove and over medium heat. Add broccoli, pine nuts, and dressing, tossing gently to coat until all ingredients are combined and heated through.
