Spicy Espresso Marinade

1 tbsp ground coriander

2 tbsps chile powder

2 tbsps chopped fresh thyme

½ cup molasses

3 tbsps honey mustard

½ cup freshly brewed espresso or strong coffee

½ cup honey

½ cup balsamic vinegar

½ cup apple cider vinegar

¼ cup freshly squeezed lemon juice


Combine all the ingredients together in a bowl and mix until thoroughly combined. This marinade is excellent with pork and chicken, particularly meaty pork back ribs and chicken drummettes. Whatever you choose, marinate the meat anywhere from 2 hours to overnight. When grilling watch the heat as the molasses will cause the meat to burn if the heat is too high
