Spicy Mexican Meatloaf
Ingredients:
Serves 6-8
1 ½ – 2lbs certified Angus Beef extra lean ground beef
½ lb chorizo sausage, skin removed and crumbled
1 cup fresh breadcrumbs
2 eggs, beaten
4 tbsps olive oil
1 large white onion, finely chopped
3 cloves garlic finely minced
1 red bell pepper, chopped
1 cup salsa, hot or mild as per your preference
1 tin diced green chilies
1 cup Monterey jack cheese, shredded
½ tsp salt
1 tsp cumin
1 tsp chili powder
1 tsp dry mustard
Garnish: Salsa, sour cream and grated cheddar cheese
Directions:
Preheat oven to 350F
Heat olive oil in a large pan over medium heat. Sauté onion, garlic, and red pepper and softened and fragrant.
Let cool. In a large bowl combine all remaining ingredients, add in the onion, garlic and red pepper and mix gently with your hands until thoroughly combined. Form the mixture into an oval loaf and place in a greased baking dish to fit or mound mixture into a large greased loaf pan. Bake approximately 1 to 1-¼ hours or until well done. Let stand for 15 minutes. Invert onto cutting board and slice into 1-inch slices. Garnish with salsa, sour cream and grated cheddar if desired.
