Serves 4

2 lg top sirloin steaks, cut in half or 4 small

1/3  cup olive oil

4 cloves garlic, finely minced

2 tbsps chopped fresh rosemary

1 tsp ground cumin

1 tsp ground coriander

1 tsp paprika

2 tbsps chopped fresh cilantro

2 tbsps rice wine vinegar

1 tbsp honey

1 tbsp Dijon mustard

1 tsp Barbarians steak spice (optional)

Freshly ground black pepper


Combine marinade ingredients together in a shallow baking dish. Add the beef and toss to coat. Cover and chill for at least one hour but preferably overnight. Bring to room temperature before grilling.

Preheat grill. Remove meat from the marinade and grill 4-5 minutes per side for medium rare.
