Caribbean Style Grilled Steaks

4 strip loin steaks


3 cloves garlic, finely minced

1 Tbsp ginger, finely minced

1/2 cup dark rum

1 tsp brown sugar

Juice of 1/2 fresh lime

1  Tbsp jerk seasoning (optional)

1 mango, peeled and cut into 1/4 – 1/2 inch slices

2 bananas, peeled and sliced lengthwise into 1/4 inch slices

1-2  Tbsp vegetable oil


Preheat grill to medium.

Combine garlic, ginger, rum, brown sugar, lime juice and jerk seasoning in a shallow baking dish. Add steaks, turning to coat evenly and let marinate 1-2 hours.

Toss fruit gently with the oil. Grill or sauté fruit until lightly browned and fragrant. Keep warm.

Drain steaks and grill until desired doneness – approximately 4 minutes per side for medium rare.

Arrange on plates accompanied by the grilled fruit.

If desired reserve marinade and bring to a boil in a small saucepan over medium heat. Cook until reduced and thickened. Spoon over steaks

You can replace the dark rum with Pepsi or Coke and omit or reduce the sugar.
