Zesty Chocolate Zucchini Cookies

Makes 4 dozen

1/2 cup softened butter

1 cup shredded zucchini

3/4 cup white sugar

3/4 cup brown sugar

2 eggs

1 teaspoon vanilla extract

1-1/4 cup white flour

1 cup whole wheat flour

1/2 teaspoon baking soda

1 teaspoon baking powder

3/4 cup unsweetened cocoa

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon ginger

1/2 teaspoon ground cloves


Preheat oven to 350F

Cream butter and sugars until light and fluffy. Beat in eggs and vanilla extract. Gently fold in zucchini. Sift together dry ingredients and stir into wet mixture until well combined. Drop by spoonfuls onto greased baking sheets, spacing well apart. Bake 12-15 minutes and cool on wire rack.

As a variation you could add 1 cup of either raisins, dried cranberries or chopped nuts or throw caution to the wind and add all three!
