CRUNCHY PEANUT BUTTER CHOCOLATE CHIP COOKIES
Ingredients:
2 1/2 cups all purpose flour
1/2 tsp baking powder
1 tsp. baking soda
1/8 tsp salt
1 cup unsalted butter, softened
1/3 cup peanut butter, creamy
1 cup brown sugar
2/3 cup granulated sugar
2 eggs
2 tsps. vanilla
1 cup toasted chopped peanuts
1 cup semi-sweet chocolate chips
1 cup Rice Krispies
Directions:
Adjust oven rack to the lower third of the oven; preheat oven to 350°F. Line baking sheets with parchment paper if desired.
Sift the flour, baking powder, baking soda and salt onto a sheet of waxed paper.
Using an electric mixer on low speed, cream the butter, peanut butter and both sugars just until thoroughly blended. Mix in the eggs and vanilla until well combined. Blend in the dry ingredients, then the peanuts and chocolate chips. Lightly stir in the Rice Krispies by hand (be careful not to crush the cereal).
Drop rounded tablespoons of batter about 2 inches apart onto the baking sheets. Bake 9-11 minutes or until cookies are golden.
Yields about 4 dozen cookies.
