Apple Cranberry Stuffed Oatmeal Cookies

1 cup all purpose flour

1 tsp baking powder

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

1/8 teaspoon ground cloves

1/8 tsp salt

1/2 cup butter

1/2 cup packed brown sugar

1 egg

1/4 cup milk

3/4 cup quick cooking rolled oats

Apple-cranberry filling

 1 1/2 cups diced and peeled granny smith apples

1/2 cup sugar

1/3 cup chopped pecans (optional)

1/3 cup dried cranberries


Preheat oven to 375F.

Combine all filling ingredients in a saucepan and cook over medium heat until thickened and the apples are tender.

Combine flour, baking powder, spices and salt in a large bowl. In a food processor or mixer beat butter for 30 seconds. Add brown sugar and beat until fluffy. Add egg and beat until combined. Slowly add dry ingredients and milk alternately beating after each addition. Gently fold in the oats. Drop by teaspoonfuls onto prepared cookie sheet. Make a hole in the center of each cookie and fill with a spoonful of the apple-cranberry filling.

Bake for 10-12 minutes.
